Sicilian Meat Roll

  • 2 Beaten eggs
  • 1/2 Cup tomato juice
  • 3/4 Cup soft bread crumbs (1 slice bread)
  • 2 Tablespoons snipped parsley
  • 1/2 teaspoon dried oregano, crushed
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper
  • 1 clove garlic, minced
  • 2 pounds ground beef
  • 6 ounces thinly sliced boiled ham
  • 1 6-ounce package sliced mozzarella cheese

Directions

  1. In a bowl combine eggs and tomato juice.
  2. Stir in bread crumbs, parsley, oregano, salt, pepper, and garlic.
  3. Add ground beef, mixing well.
  4. On foil or waxed paper, pat meat to a 10×8-inch rectangle.
  5. Arrange ham slices atop meat, leaving a small margin around edges.
  6. Arrange mozzarella cheese slices over ham, reserve a few slices of cheese.
  7. Starting from short end, carefully roll up meat, using foil to lift; seal edges and ends.
  8. Place roll, seam side down, in a 13x9x2-inch baking pan.
  9. Bake in 350 degree F. oven about 1 1/4 hours or till done. (Center of meat roll will be pink due to ham.)
  10. Cut reserved cheese slices into triangles; overlap atop meat.
  11. Return to oven about 2 minutes or till cheese melts.
  12. Sprinkle with paprika, if desired.
