PepperJack’s Corn Tortillas
Nothing like freshly made Corn Tortillas. Straight forward, healthy, and fresh.
Servings: 12 Tortillas
Ingredients
- 1 ½ Cups Masa
- ¼ tsp Salt
- 2 Tbsp Lard Vegetable Oil can be used
- 1 Cup Hot Water 110 degrees
Instructions
- Wisk together Masa and Salt
- Add Lard or Oil
- Stream in water slowely mixing by hand. You want the water to incorporate slowly and evenly throughout the masa.
- Place on board and kneed thouroughly for at least 3 minutes. Dough should be smooth and not sticky.
- Form into a ball and wrap in plastic wrap.
- Let sit in a warm dry place for 1 hour.
- After the dough has rested, tear off pieces and roll into little balls. The size depends on how large or small you want the tortillas.
- Place small ball in between two sheets of parchment paper and place in tortilla press. Press dough into tortilla shape evenly and thin.
- Place in hot pan or flat top to cook until tortilla just turns brown. Tortilla should puff like a pillow during this process. Flip over and do the same on side two.
- Place in tortilla warmer until ready to use. Can be stored in plastic bag when cooled.
