PepperJack's Corn Tortillas

Nothing like freshly made Corn Tortillas. Straight forward, healthy, and fresh.

Ingredients

  • 1 ½ Cups Masa
  • ¼ tsp Salt
  • 2 Tbsp Lard Vegetable Oil can be used
  • 1 Cup Hot Water 110 degrees

Instructions

  • Wisk together Masa and Salt
  • Add Lard or Oil
  • Stream in water slowely mixing by hand. You want the water to incorporate slowly and evenly throughout the masa.
  • Place on board and kneed thouroughly for at least 3 minutes. Dough should be smooth and not sticky.
  • Form into a ball and wrap in plastic wrap.
  • Let sit in a warm dry place for 1 hour.
  • After the dough has rested, tear off pieces and roll into little balls. The size depends on how large or small you want the tortillas.
  • Place small ball in between two sheets of parchment paper and place in tortilla press. Press dough into tortilla shape evenly and thin.
  • Place in hot pan or flat top to cook until tortilla just turns brown. Tortilla should puff like a pillow during this process. Flip over and do the same on side two.
  • Place in tortilla warmer until ready to use. Can be stored in plastic bag when cooled.
