PepperJack's Corn Tortillas
Nothing like freshly made Corn Tortillas. Straight forward, healthy, and fresh.

- 1 ½ Cups Masa
- ¼ tsp Salt
- 2 Tbsp Lard Vegetable Oil can be used
- 1 Cup Hot Water 110 degrees
Wisk together Masa and Salt
Add Lard or Oil
Stream in water slowely mixing by hand. You want the water to incorporate slowly and evenly throughout the masa.
Place on board and kneed thouroughly for at least 3 minutes. Dough should be smooth and not sticky.
Form into a ball and wrap in plastic wrap.
Let sit in a warm dry place for 1 hour.
After the dough has rested, tear off pieces and roll into little balls. The size depends on how large or small you want the tortillas.
Place small ball in between two sheets of parchment paper and place in tortilla press. Press dough into tortilla shape evenly and thin.
Place in hot pan or flat top to cook until tortilla just turns brown. Tortilla should puff like a pillow during this process. Flip over and do the same on side two.
Place in tortilla warmer until ready to use. Can be stored in plastic bag when cooled.
